    So maybe I went ahead and jumped the gun on summer a little bit.

    April? I could have sworn it was, like, July or something.

    After a stretch of 70 degree sunny days here in Minnesota, reality came crashing in on us and right now I am literally writing this post about Frosted Blueberry Lemonade (summer! WANT SO BAD) with doors and windows tightly closed to keep out the 35 degree sleet. Please no snow, please no snow, please no snow.

    I am burrowing deep into my thickest Forever 21 grandma-style sweater and I have the heat set to 73 degrees because that’s as high as the More Responsible Spouse will let me go. The forecast is not looking much better for the rest of the week, and I feel the ultimate sad face emoji coming on – the one with the crinkled eyebrows and mouth wide open, crying out in distress.

    It has come to this.

    (also: a favorite thing of mine right now is identifying my real life emotions in real life conversations by describing myself as an emoji. Bjork loves me so much.)

    All that to say, I need the warmth and I need it n-o-w. And in case of emergency where Minnesota April plays summer-teasing tricks of me and there is actually no warmth to be found, I will accept things with just those warm weather vibes.

    And that’s why I’m sharing this Frosted Blueberry Lemonade today. Warm weather vibes, my friends. WWV.

    As you might remember from this Coconut Green Smoothie post a few weeks back, we are big fans of Bai5 around here – we buy ours at Target and it has become a regular item on our grocery list.

    We like Bai5 for a few reasons, one of which is that they use the outer part of the coffee fruit (!) to make these yummy drinks so you get a tiny boost of caffeine – similar to the amount in a cup of green tea – and you also get the natural antioxidants from the coffee fruit infused into the drinks. Also likable: the drinks are sweetened naturally with organic stevia.

    For us, Bai5 is a great alternative to juice or pop for just a regular drinking drink, plus it works well for mixed or special occasion drinks, and best of all –> it has become an essential in our daily smoothies.

    Frosted Blueberry Lemonade


    Description

    Frosted Blueberry Lemonade – made with just two main ingredients. Super healthy, refreshing, and ready in seconds! So good.


    Ingredients

    Scale
    • 1 1/2 cups Bai5 Limu Lemon
    • 2 cups frozen blueberries
    • juice and zest of 1 lemon
    • 2 teaspoons light agave nectar
    • a handful of fresh mint (optional)
    • 1/4 cup yogurt (optional)

    Instructions

    1. Soften the blueberries in the microwave for 30 seconds or just leave them sitting out at room temperature for 20 minutes or so. They should still be partially frozen but soft enough to easily blend.
    2. Blend the blueberries, Bai5 Limu Lemon, lemon juice and zest, agave nectar, mint leaves, and yogurt together until smooth.
    3. Serve immediately topped with a few fresh mint sprigs. If you can’t serve immediately, just be sure to stir or shake the frosted blueberry lemonade before serving because it will separate as it rests.

    Notes

    The lemon juice and zest bumps up the flavor. The agave offsets the tang of the fresh lemon juice. And the yogurt just gives the whole thing a little more bulk and creaminess – making it feel less like a slushie and more like a creamy smoothie. And the mint – just, YUM.

    All of those things would be optional, though, so mix and/or match and/or find some yummy add-ins that you might like!

    I don’t have a nutrition label for this one because it includes a product that is not yet in our database (the Bai5 Limu Lemon) but this blueberry lemonade has really minimal calories since the base of the drink (Bai5) has only 5 calories per serving.
