    You guys, I am on a green smoothie KICK. And when I say kick, I mean I’m in this phase where I’m doing a green smoothie every Monday – Tuesday – Wednesday – Thursday – Friday – Saturday – Sunday of the week. It feels really unusual annnnd sort of amazing.

    This little green number is keeping me caught up with all my fruits and veggies plus it tastes amazing!

    And all it takes is just frozen peaches, fresh spinach, Bai5 Antioxidant Infusions Molokai Coconut, and some flax or ginger if I’m feeling extra party-ish. I mean, what kind of awesome is that?

    Eating vegetables. Let’s go there. Please don’t judge my backsliding, but I used to be super good about eating salads.

    Not even in the way like I was so good at it, but more in the way like I actually liked to eat them. I specifically remember one summer back in the day when I was working as a nanny and how much I would genuinely look forward to my daily (I SAID DAILY) spinach salad with carrots and Asian dressing. Every day, always the same, and somehow it was still always exciting to me. A plain, two-veggie spinach salad. I hate myself right now.

    Fast forward a few years and a few hundred recipes later, and I’m in this phase where I am a) more hungry in general, and b) more hungry for mouth-rocking flavor and texture. A two-veggie salad is no longer in my vocabulary – if I’m going to eat a spinach salad, it’s going to have at least 800 crunchy things on it (are they fried? I won’t complain), and it will be drizzled heavily with a super-tangy homemade dressing, and you better know I’m going to top it all off with every possible fresh herb in my fridge.

    The only problem with being a person who eats fewer salads is that I miss out on the Awesome Feeling that comes with eating raw, fresh vegetables and fruits. We all know it’s going to bust out that inner healthy glow when we eat more produce – sometimes it’s just actually hard to DO it. I mean, I’m sorry self, but one cinnamon-sugar dusted banana on peanut butter toast cannot count as your daily fruit.

    GREEN SMOOTHIES THO! They are making my life 10x more healthful while not requiring anyone to eat any salads of any kind.

    I pack in about a cup of spinach, a cup of peaches because they have proven themselves to me time and time again to be the best dang fruit for green smoothies in terms of taste, texture, and color, and a cup of Bai5 Antioxidant Infusions Molokai Coconut which is somewhere between a healthy, naturally sweetened juice and a coconut water.

    Bai5 is pretty much the best thing to happen to my green smoothies since the rise of those obnoxiously cute paper straws. Before I discovered these drinks, I was just using water in my green smoothies. Healthy points – okay, fine, yes. How-ev-er. The addition of Bai5 makes the difference between me getting up in the morning and making a green smoothie because I should, and me getting up in the morning and making a green smoothie because I can’t wait for mooooore. These drinks are naturally sweetened (no refined sugar! hoorah!) and they pack in a bunch of antioxidants from our familiar old friend, the coffee fruit. WHO EVEN KNEW.

    I love all that stuff, but you guys, mostly, what I care about is making a green smoothie that I actually love drinking, and this is the one. Right here, right now.

    Simple Coconut Green Smoothie


    Description

    This Simple Coconut Green Smoothie is loaded with the power of fresh fruits, veggies, and antioxidants. 4 ingredients + super easy for breakfast!


    Ingredients


    Scale

    • 1 cup Bai5 Antioxidant Infusions Molokai Coconut
    • 1 heaping cup frozen peaches
    • 1 cup spinach
    • 2 tablespoons flaxmeal


    Instructions

    1. Thaw the peaches so they are still frozen, but soft. I usually put them in the microwave for 30 seconds to one minute, or I just leave them out on the counter for 15-20 minutes. This will help the texture of the smoothie.
    2. Blend the Bai5 Molokai Coconut, frozen peaches, spinach, and flax meal for 2-3 minutes or until very smooth. Taste and adjust to your liking. Serve or refrigerate immediately.

    Notes

    Add-ins that I like: chai seeds, honey, fresh ginger, frozen mango chunks, other flavors of Bai5 (especially mango)
