Seems like I’ve developed a little trick. Have you noticed?
Not the one where I stuff five of the fudgy oreo brownies into my mouth in 60 seconds.
Or the baby-powder-to-degrease-hair trick.
Ok, I’ll just tell you. My trick is when I don’t know what to name a recipe that has lots of fresh vegetables and herbs (score!), I just add “Farmer’s Market” to the beginning of the title.
Like the farmer’s market pasta. Remember that cheesy deliciousness? That was good.
But this flatbread pizza is good, too! And wayyy healthy.
Double good!
So here’s what happened. I shredded the zucchini, sauteed it with olive oil, and spread it on a toasted flatbread. It got kind of, almost, creamy? Obviously it was a little weird. But totally good.
Then I topped it with fresh grape tomatoes that “taste like candy”.
If anyone ever, ever tells you that tomatoes “taste like candy”, run away as fast as you can.
But I didn’t know that yet, so I accepted this guy’s offer and tried one. And this guy at the farmer’s market was NOT LYING. They are the sweetest little juicy garden fresh bites that I have ever tasted.
So then I wanted to taste all the tomatoes, which got awkward.
I topped off this “pizza” with soft white cheese (think feta, mozzarella, goat, or gorgonzola) and fresh basil. And I loved every feel-good bite.
Farmer’s Market Flatbread Pizza

Description
This superfast flatbread pizza features fresh farmer’s market produce like zucchini, cherry tomatoes, and basil. Easy and delicious!
Ingredients

- 1 flatbread
- 1 cup shredded zucchini
- 1 teaspoon olive oil
- 1/2 cup chopped grape tomatoes
- 2 tablespoons white cheese
- 3 leaves fresh basil, chopped
Instructions
- Saute the zucchini in the olive oil on high heat. Season generously with salt and pepper. Stir and leave alone for a little while, so you get a little bit of texture from the browning on the zucchini.
- While you’re sauteing, toast the flatbread in the oven at 400 degrees.
- When the zucchini is soft and just slightly browned, remove from the heat. Take the flatbread out of the oven and spread the zucchini on the flatbread.
- Top with the fresh tomatoes, cheese, and fresh basil. Cut, serve, and enjoy!
