    Um, hi. This is breakfast level: ridiculous.

    And I’m going to try to sell it to you anyways, because what kind of person would I be if I pretended I wasn’t totally digging a waffle stack layered with Nutella, melty marshmallows, toasted coconut, and just a tiny drizzle of organic pancake syrup? A lying person, that’s what.

    And I am not about to lie to you. No, friends: I truthfully proclaim that I am totally into this ultra-decadent, over-the-top, Pinterest-circa-2013-esque type situation. No apologies for the smores waffle love that is towering high and bold in a happy pile on that plate over there.

    I have recently re-discovered my love for waffles with the purchase of a very cheap waffle maker a few weekends ago. We got at least 18 waffle makers for our wedding, and then I think I was just so overwhelmed that I returned all of them. 7 years later, I’ve finally come to my senses and we are now making waffles almost every weekend.

    And as I’ve started bringing waffles back into my life, I realized that there are, in fact, zero good reasons why a waffle shouldn’t also hold a layer of Nutella and melty marshmallows.

    It might seem like overkill to add syrup to this smores waffle escapade, but I found that I wanted just enough of a tiny drizzle to make the whole exterior sort of glow and glimmer. That’s normal, right? Also: I’ve never been one to shy away from overkill when it comes to excessively delicious brunch foods.

    If the syrup was overkill, at this point finishing with something else feels even more unnecessary, but you guys, toasted coconut will take you on a magic carpet ride to smores waffle heaven. Do you trust me? It’s a whole new world out there.

    It’s toasty and golden and crunchy – and trust me, all that melty-smooshy yum needs some crunch in the mix. It’s a little more earthy, more mellow, and it sort of nails everything to the ground a little bit, making it entirely possible to eat a full blown stack of these breakfast bombs.

    Not saying I’ve done it, just saying it COULD be possible. 🤐

    Smores Waffles with Nutella and Toasted Coconut – HELLO LOVER. brunch dreams coming true!


    Ingredients

    Waffle Batter:

    • 2 eggs
    • 2 cups flour
    • 1 1/2 cups milk
    • 1/4 cup Wholesome! organic honey
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 2 graham crackers, crushed

    Filling / Toppings:

    • nutella
    • mini marshmallows
    • Wholesome! organic pancake syrup
    • toasted coconut
    • crushed graham crackers


    Instructions

    1. Stir all the waffle batter ingredients together in a large mixing bowl until well combined. Preheat a waffle iron.
    2. Pour batter into waffle iron and cook until golden brown. While it’s still in the waffle iron, cut the waffle in half and carefully spread each side with Nutella. Add a layer of mini marshmallows to one of the two halves, and then fold the remaining half over on top of the marshmallows. Close the waffle iron enough to press both sides together and melt the marshmallows (about 3-4 minutes).
    3. Remove from waffle iron and top with syrup, toasted coconut, and more crushed graham crackers. Mmmmmm yes.
