    But also, yes, here we are. And it’s clear we’re still very much looking for an ease into things. This month we’re all about preparedness (#newyear) and ready-grab snacks and not thinking too hard about it all, and bingo! These lil’ energy bites are our new very best friend.

    Wholesome, slightly sweet, super satisfying, and very keep-in-the-fridge/ready-whenever-you-need-them best friends. And we are calling on them. Weekly. You will too!

    A No-Bake Seven-Ingredient Miracle

    It takes very few things for these little wonder bites to come together and here’s the thing, an oven IS NOT ONE OF THEM. A real simple list of ingredients that you mix up, ball up, chill up, and then eat ’em up all the days through.

    Three Steps To Make These Energy Bites

    Who doesn’t love a three-step process?! Classic. Easy. Get us to pecan pie bites quickly, please.

    1. Throw everything in the food processor and buzz up until mostly smooth and kinda dough-y.
    2. Start balling them up! And pop them on a parchment lined sheet.
    3. Chill and store in the fridge or freezer (we prefer the freezer, but both are great!)

    Made that last guy a step even though it’s really not a step so much as a yay-you’re-done-pecan-pie-energy-bites-forever declaration. See? So easy! These keep saving us over and over and over.

    Made To Your Heart’s Desire

    The flexibility of these angels is also A+. You can throw in different nuts, use honey or another liquid sweetener you prefer. Want a different nut butter option? That’s a thing you can do! Want to skip flaxmeal because that isn’t a pantry-stocker for you? You’re a champion, who needs it. Did some cranberries or chocolate chips fall in that food processor while you were mixing?! OK YES, YOU’RE DOING IT. SNACK NIRVANA IS ON ITS WAY.

    Whatever you make them, they are great for an easy grab-and-go breakfast, or awesome to put out on the table for the kiddos to occupy their little hands and tum tums while you get dinner prep going, maybe you’re doing laps through the house while you WFH and why not stop and grab one out of the fridge and pop it in your mouth on the move? It’s like those cheering volunteers who hand you tiny cups of water during a marathon but instead, it’s pecan pie energy bites and honestly, they are so, so much more fun than a tiny cup of water.

    (But also, drink water. It’s the new year. We’re all making that resolution, right? Drink more water?)

    Is there a sub for almond butter?

    • 1 1/2 cups pecans
    • 1/2 cup oats
    • 1/4 cup flaxmeal
    • 1/4 cup almond butter
    • 2 tablespoons maple syrup
    • 1 teaspoon vanilla

    1. Mix everything in the food processor until it’s nice and smooth-ish, like a dough.
    2. Roll into individual balls.
