This is the story of buying a helmet in the Philippines.
Me + helmet –> riding the moped, so off to the mall we went to find a sturdy and fashionable (heh) helmet.
First of all, I should not go to the mall without eating dinner or else I will end up doing what I always do: eating a basket of Mojos.
And side note: while searching for that picture of Mojo’s I stumbled upon a RE-CI-PE for Mojo’s. Holy Heaven. That is in my near future.
Second of all, the department store helmet selection was lacking variety. And by lacking variety, I mean there were a million and one styles of black, red, and black and white zooba patterned helmets that were clearly made for motorcycle-driving, maybe even motorcycle-racing Filipino men.
I don’t mean to be vain or anything but I’d like to NOT wear a zooba helmet for the next ten months.
What I would like to do is come home and fry some chicken fingers.
Because even though I want to bake them, I really want to fry them more. And they are so crunchily, Parmesanly delicious.
Dipped in cheese sauce? Fine.
Dumped with cheese sauce? Better.
Parmesan Chicken Fingers with Garlic Cheese Sauce

Description
These Parmesan chicken fingers are dipped in a homemade garlic cheese sauce. Everyone loves these chicken fingers! Perfect appetizer.
Ingredients

- 4 skinless, boneless chicken breasts
- 1 cup flour
- 2 beaten eggs
- 2 cups breadcrumbs (I used panko breadcrumbs)
- 1/2 cup grated Parmesan cheese
- Oil for frying + parsley for garnish
- 2 ounces light cream cheese
- a splash of milk
- 1 teaspoon minced fresh garlic or garlic salt
- 1 teaspoon oil
- 1 ounce good quality shredded cheese of choice (I used a sharp white cheddar)
Instructions
- Cut the chicken into strips. In a blender or food processor, pulse the crumbs and Parmesan until it’s a fine crumb mixture.
- Put the flour, egg, and crumb mixture in individual shallow bowls. Dust each strip of chicken with flour, dip into the beaten egg, and roll in the crumb mixture. Coat all pieces before you start frying.
- Pour oil in a large skillet or frying pan until it’s a few inches deep (enough to cover the chicken on one side). Heat over medium low heat until a drop of water sizzles in it. Add the chicken in batches and fry for 1-3 minutes until they reach desired golden-brownness. Make sure to fry long enough to cook each piece all the way through. Remove from oil with tongs and place on a paper towel lined plate to drain the oil. Let cool slightly.
- For the cheese sauce, melt the cream cheese in the microwave for about 30 seconds. Whisk in the milk, garlic, and oil until smooth. When smooth, add the cheese. Melt for another 20-30 seconds and whisk again until totally smooth, adding more milk to thin out the sauce to your desired consistency. You can also do this on the stovetop – I’ve done it both ways.
Notes
Make extra sauce if you’re planning to serve more than 3-4 people.
And if you love salt, sprinkle the chicken fingers with coarse sea salt just after removing them from the frying pan. Ohhh yeah.
