    Just like that, the inner goddess is back.

    Last time she brought desserts, and this time she’s taken the form of vibrant mango raspberry breakfast bowls loaded with glow-worthy nutritious ingredients and topped with everything beautiful and nice, including but not limited to your last crumbs of Coconut Oil Granola.

    I am not mad about seeing this in front of me at breakfast.

    The timing of this post feels very appropriate because I am basically dying for a boost of these inner goddess healing powers after the last few days of living up The Sick Life On The Couch. Hello blankets, tissues, and all the best-worst shows on Hulu (I’m looking at you, Bachelor). The actual sickness plus my gravitation towards health drama has made for a really special few days. And by special, I mean send your condolences to Bjork.

    These bowls are my life-giving secret for baby-stepping my way back into the real world.

    I actually had a super-yum, spicy, savory post scheduled for yesterday, but being so suddenly bleh in the appetite department, I just couldn’t bring myself to write about all the delicious flavors of the recipe when all I could stomach in real life were those little packets of noodle soup (this is a judgement-free zone so don’t even speak). All I can say during times like these is –> stick with me. My appetite shall return and it will bring the more peppy, bold, flavor-packed recipes along with it.

    For the time being, though, who even needs the spicy savory things in life when you can glow from the inside out with these gorgeous, refreshing, happy-face mango raspberry breakfast bowls?

    I can feel the inner goddess of glowy things awakening within.

    The beauty of these inner goddess breakfast bowls is that you can basically make them however the heck you want with whatever the heck you happen to have on hand. One of my winter survival tactics is to load up on frozen fruit, so when I’m ready for a week’s worth of breakfast bowls, I just consult my freezer to find out what I have left and then that becomes the flavor du jour for my inner goddess beauty bowls.

    And I should have called them beauty bowls. Dang.

    One other thing worth mentioning is that these pretty breakfast bowl combos can keep in the fridge for a few days in little individual jars or containers, so you can bring out your best morning self even when you’re on the run or you need to eat in the car or during a meeting or something. Not that I’ve ever done that or anything – you know, the idea just sort of popped into my mind just now.

    Inner Goddess Raspberry Breakfast Bowls

    Description

    Inner Goddess Raspberry Breakfast Bowls are loaded with nutrients, ready in 20 minutes, and perfect for breakfasts on the go.


    Ingredients


    Scale

    • 10 ounces frozen mangoes or peaches
    • 1 cup water
    • 10 ounces frozen raspberries
    • 1 cup light coconut milk
    • 1/3 cup chia seeds
    • 1/4 cup flaxmeal
    • 1/4 cup honey
    • a pinch of salt
    • berries, granola, nuts, coconut, and cream for topping


    Instructions

    1. Soften the frozen fruit in the microwave or by leaving it out on the counter for a little while.
    2. Blend the peaches with the water. Blend the raspberries with the coconut milk.
    3. Combine the two fruit puree mixtures and stir in the chia seeds, flax, honey, and salt. Let stand for 10-15 minutes to thicken.
    4. Serve with toppings of your choice. Store leftovers in the fridge for up to three days – add water to leftovers to rehydrate (the chia seeds will soak up a lot of the moisture, making them super thick).
