    Fresh Mango Lassi

Mango lassi in a glass with a spoon.

    I’m hunnnngry.

    All.the.time.

I thought I was hungry in Minnesota, but dang. This new life in the Philippines has me eating at least 18 times a day. I’m blaming it on the sweltering heat and humidity along with a laundry list of other things, such as my new permanently shiny-faced-and-electrocuted-hair style.

Speaking of hotness, I hear there’s some kind of crazy heat wave back in the States. So if you didn’t already need this, now you N-E-E-D this. Like, for electrolytes and hydration and stuff.

This little lassi was a last ditch effort to cool myself down after walking about a mile home from the school wearing black heels and – wait for it – black dress pants. I don’t think the Loft had me walking down Banawa Road in mind when they designed those pants. Oiy.

Fast forward to me sitting in our prized air conditioned room, in shorts, drinking a sweet, juicy, creamy, decadent mango lassi and feeling my body temperature cool by about 100 degrees per second.

This was THE most refreshing thing I’ve had since I’ve been here in the Philippines.

    Yogurt, mango, sugar.

    WIN.

    Fresh Mango Lassi

    Description

This fresh mango lassi is made with just 3 ingredients: mango, yogurt, and sugar. Super simple, super yummy. Perfection in a glass!

    Ingredients

    Scale
    • 1 cup plain lowfat yogurt
    • 1 large, ripe mango
    • 2 tablespoons sugar (or honey, agave, Truvia, etc.)

    Instructions

    1. Blend all ingredients.
    2. Drink and love.

    Notes

If you are planning ahead, put the mango in the refrigerator so it’s nice and cold for your smoothie.

You can add a few ice cubes to this to cool it down even more, but I didn’t use ice (can’t drink the water here) and it was SO GOOD without it that I wouldn’t include it even if I did have access to clean ice.

P.S. Happy 4th of July, American friends!

I’ll be celebrating with you by overeating the grilled burgers, potato salad, chips, and ice cream at our American staff party. I’ve always been kind of patriotic like that.
