    Honey Butter Spread on Lemon Cake

    Honey. Butter. Spread. It’s exactly what it sounds like. The “Honey Butter” part = honey + butter. The “Spread” part = more sugar and it becomes thick and spreadable on anything and everything.

    It’s honey butter goodness that’s a cross between frosting and… uhm… butter.

    Sadly, I did not churn my own butter to make this Honey Butter Spread.

    Yet somehow I still felt like Laura Ingalls Wilder as I licked Honey Butter Spread off my fingers. It just seemed like an old-fashioned thing to do. Because they needed to eat butter to stay warm in the winter, or something like that.

    If I was still a student at the community ed “Old Time School”, I would request a Honey Butter Sandwich instead of the lard sandwich that my mom once snuck into my lunch pail. Those were feel-good summer days. Packing my lunch in a tin pail, getting water from a rusty old pump, writing with a feather pen, and most importantly, wearing a checkered bonnet. And apron. Nothing screams supercool like a bonnet, apron, and braces in the year 1995.

    I hope at least 10% of you know what I’m talking about?

    But since most of you probably don’t, let’s talk about something you do know about: Buttah.

    I recommend using “good” butter for this Honey Butter Spread. Freshly churned, if you live on the prairie with Laura I. W.

    If not, I’ve found that the generic brand at Target is awesome for baking and… eating, in this case. What does it say about me that I consider generic brand butter to be “good butter”? You buy generic, too, right?

    Right?

    Honey Butter Spread on Lemon Cake


    Description

    This super simple honey butter spread is soft and creamy – perfect on a homemade lemon loaf. Delicious for breakfast or dessert!


    Ingredients

    Scale
    • 2 tbs. honey
    • 4 tbs. room temperature/soft butter
    • 2 tbs. powdered sugar

    Instructions

    1. Soften butter for 10-15 seconds in the microwave if it’s cold.
    2. Pour in the honey into a bowl with the butter and stir until smooth. Add powdered sugar and stir until smooth. Add more powdered sugar for a thicker spread.
