I’ve been sorta, um, off the grid for the last few days.
So bring me up to speed – what’s the general feeling on Valentine’s Day right now?
We’re three days out. Are people talking about it? Is everyone annoyed? Are you, like, personally ready for it? And it is normal that after you’ve been married for about five minutes, you stop buying each other Valentine’s Day gifts?
That’s not entirely true, but if this year’s Christmas gifting is any indication of what’s to come during this year’s Valentine’s Day gifting, we are going to be eating a pan of peanut butter fudge together by the romantic light of Lost playing on the laptop.
As if you need convincing, here are a few reasons why this peanut butter fudge is perfect for Valentine’s Day.
- Peanut butter. I adore peanut butter. Adore = love = valentiney.
- Takes ten minutes to make. Count to 60 ten times and you’ll be done. I swear.
- Chocolate plus sea salt. Lalalalalalalala.
- Very giftable, if you’re the kind of person who gifts things on Valentine’s Day. My mom is always good at that. This year she sent me some candied mocha almonds (rocking my life) and Valentine’s napkins all the way from the ol’ USA. I sent her a picture of this fudge followed by a picture of my face after eating all the fudge.
- Just kidding. That’s gross.
- Peanut butter fudge happens to make a real nice midnight snack. And breakfast. This and coffee? Ohhh my. This definitely doubles as a self-present.
Did I already tell you these have Saltines in them? As in, the crackers. Here in the Philippines the brand is called Sky Flakes and I eat more of them than I’d care to admit thanks to those ever-present mystery sicknesses and/or my mindless snacking habits combined with the fact that we don’t have a very well-stocked kitchen. On the other hand, I can’t remember when strawberry jam has ever tasted so good as it does when spread on those salty white Sky Flakes crackers and served with a glass of milk. Classic and perfect.
I have never ever met a Saltine cracker dessert that I didn’t like. My grandma makes these candied Saltine crackers with melted butter and brown sugar, like she does. They are so addicting. That Christmastime toffee with Saltines? Cracker bars? My oh my.
If you’ve never made a dessert with Saltine crackers, this is your time.
Crush those babies up real good, boil some sugar and milk, stir it all together with some peanut butter, and say halloooo. Peanut buttery perfection – kind of like a cross between a scotcheroo and regular fudge. The Saltines make it a tiny bit crunchy, and the salti-ness (not to be confused with Saltines)? Mmm. Mmmmmmmmm.
Top the whole thing with chocolate, and if you’re brave, sea salt (OH YES), and you’re going to have yourself a really happy Valentine’s Day.
Plus think of all that time you’re saving. Just think of it.
10 Minute Peanut Butter Fudge

Description
This 10 minute peanut butter fudge uses crushed saltines for the ultimate salty sweet flavor combo. This stuff is addicting!
Ingredients
- 2 cups sugar
- 1/2 cup milk
- 3 tablespoons butter
- 30 Saltine crackers, finely crushed in a food processor or blender (see notes)
- 1 teaspoon vanilla
- 1 1/4 cup peanut butter
- 1 1/2 cups chocolate chips
- coarse sea salt
Instructions
- Crush the crackers into fine crumbs, depending on how much texture you want in your fudge. Place in a large mixing bowl with the peanut butter.
- Combine the sugar, milk, and butter in a saucepan over medium low heat. Once the mixture starts boiling, turn on a timer for 1 minute. The mixture will look a little frothy. Remove from the heat after 1 minute and pour immediately over the crackers and peanut butter. Add the vanilla and stir to combine until an even, soft dough forms.
- Press the dough into a 9-inch glass baking dish (or other dish) lined with parchment paper if desired. Allow to cool for at least 1 hour or until firm enough to cut into squares – it sets up pretty quickly in the refrigerator.
- Melt the chocolate chips and drizzle over the fudge. Sprinkle with sea salt.

Here’s a link that shows the size of crackers that I used. I didn’t break them apart – I just counted the sheets with three smaller pieces as one cracker.
